A small portion of spicy eggplant leftover. What to do?

Whole Wheat Toast -Margarine (with Flax Seed)


Pan Roast Grape Tomatoes

After the tomatoes “toasted”, added the leftover eggplant and simmered. Served over the toast.

Inspired by a little bit of ratatouille, a little bit of bruschetta, or just call it “cleaning out the refridge”. Hee hee.

Should’ve thought of it at the time and added a fried egg on top. Brain too small. 🙂

No, not a small kid, and not a potato. Hee hee.

Toaster oven tomatoes. The Mouse’s new favorite way to eat tomato.

Happened kinda by accident. A container of grape tomatoes going slightly wrinkled.

Not the greatest for salad. What to do?

Avocado oil, salt, pepper, 300 degrees, 30 minutes, toaster oven.


I know, done before, but first time for The Mouse. The Mouse liked. Hee hee.

Tried it again the next night, regular tomato.

TOT, laulau, shiso leaf, apple banana. Sorry, no plating presentation, popped the whole plate into the toaster oven to roast the tomato and warm the laulau (from the grocery store). Still yum. 🙂

I know, The Mouse eats weird, but it’s The Mouse’s plate. Hee hee.

The Mouse’s “home lunch” at the office.

Start with toasted whole wheat bread from JJ2 Bakery.

Add half a can of tuna (from last night’s dindin), mixed with mayo, and freshly sliced tomato (we had Roma in the refridge).

Lastly, shiso leaf (from our outside bucket).


Tuna, tomato, and shiso leaf, the perfect combo for The Mouse’s tuna sandwich. 🙂

Jus’ a few things.

Bamboo Shoot in Chili Oil

The Cat likes as a garnish to her soup noodle bowl. Should’ve been a panda. Hee hee.

Fried Chili in Oil

Try try. Not sure where this condiment falls on the Scoville scale, it’s not supposed to be too hot. We’ll see, cross your fingers.

One review thinks this is the next Sriracha sauce.

Apple Vinegar

Made in Taiwan. Not apple cider. Store owner said it’s sweeter than apples cider vinegar. Good to drink, vegetable and fruit salads.

Tried it on an avocado, tomato, sweet onion salad last night.

Very yum! No oil, the avocado provided enough fat, just a sprinkle of Kaua‘i salt to finish. A good try try. 🙂
