Browsing through the internet. Idea for breakfast, salsa on eggs. No salsa in the pantry.

Acceptable Substitute

At least to The Mouse. Hee hee. Eggs and fried rice from the snack bar.

Scrambled Eggs with Tomatoes and Okra

Okra was a bit hard and stringy, tossed. Tomato added a “ketchup-y” vibe. Nom.

Stayed a little longer in town yesterday. Grocery store would probably be sold out of lau lau and kalua pork by the time The Mouse drove back. Took a chance at a “hole-in-the-wall”.

Back Entrance

Of course, being Friday, had to try the “Hawaiian plate”.

Lau Lau, Mac Salad, Kalua Pork and Cabbage, Rice

Not bad, not as good as grocery store, but, what’s the bumper sticker message? “A bad day fishing is better than a good day at work”? Hee hee.

Enjoy. Eat well.

Leftovers?

A small portion of spicy eggplant leftover. What to do?

Whole Wheat Toast -Margarine (with Flax Seed)

Then

Pan Roast Grape Tomatoes

After the tomatoes “toasted”, added the leftover eggplant and simmered. Served over the toast.

The Mouse’s “Mess”

Inspired by a little bit of ratatouille, a little bit of bruschetta, or just call it “cleaning out the refridge”. Hee hee.

Should’ve thought of it at the time and added a fried egg on top. Brain too small. 🙂

Enjoy. Eat well.

TOT

No, not a small kid, and not a potato. Hee hee.

Toaster oven tomatoes. The Mouse’s new favorite way to eat tomato.

Happened kinda by accident. A container of grape tomatoes going slightly wrinkled.

Grape Tomatoes, Slightly Wrinkled

Not the greatest for salad. What to do?

Avocado oil, salt, pepper, 300 degrees, 30 minutes, toaster oven.

TOT

I know, done before, but first time for The Mouse. The Mouse liked. Hee hee.

Tried it again the next night, regular tomato.

The Mouse’s Plate

TOT, laulau, shiso leaf, apple banana. Sorry, no plating presentation, popped the whole plate into the toaster oven to roast the tomato and warm the laulau (from the grocery store). Still yum. 🙂

I know, The Mouse eats weird, but it’s The Mouse’s plate. Hee hee.

Enjoy. Eat well.

TTS

Not BLT, TTS.

The Mouse’s “home lunch” at the office.

Start with toasted whole wheat bread from JJ2 Bakery.

Toasted Whole Wheat Bread

Add half a can of tuna (from last night’s dindin), mixed with mayo, and freshly sliced tomato (we had Roma in the refridge).

Tuna and Tomato

Lastly, shiso leaf (from our outside bucket).

TTS

Tuna, tomato, and shiso leaf, the perfect combo for The Mouse’s tuna sandwich. 🙂

Enjoy. Eat well.
