Salty Sweet

The Mouse has not done a braise in a while. Too humid for soup. Nice package of pork ribs (cut for sweet sour) at the store.

Pork Ribs

After the initial parboil wash, braise for about an hour in water and apple cider vinegar. Added miso, sake, fresh ginger, and raw honey and braised for another 1/2 hour.

Miso, Sake, and Honey Braised Pork Ribs

The ribs came out tasty and tender, the sauce over rice or mashed potatoes, awesome.

Flavor kinda “teriyaki-ish”, more earthy, funky (fermented in a good way).

Stay safe and well.

Go to farmers market, eat breakfast/brunch/lunch (one meal), nap, try to make a one-pot something (soup, stew, braise, etc) for most of the week (if not for the week).

This week’s one-pot.

Pork Foot Soup

Seasoned with a little dark soy and sake.

So, broth for The Cat’s soup noodle at night, and …

Simmered Pork Foot

The solids for The Cat’s bento lunches. Easy peasy. Hee hee.

This week’s vegetable …

Bitter Melon

A quick par boil, done. 🙂

Enjoy. Eat well.

New Flavor

Chefs P & p have been toying with a new sake ganache flavor. Ginkoubai Hannya Tou sake is a chili pepper infused sake. It’s supposed to start off sweet and end with the chili pepper. Chefs newest obsession.

We got to try (one for The Cat and one for The Mouse). It’s good.

They’re planning to put them in the Valentine’s Day boxes, because as Chef p said, “spice is good for Valentines Day”. 🙂

Enjoy. Eat well.

Made reservations at Morio’s Sushi Bistro tonight. Fifty-one reviews on Yelp, all five-stars, wow. I heard he likes his liquor. So …

Yesterday I went to The Sake Shop and picked up a bottle.

Nadine, the proprietress, knows Morio and assisted me in picking out an appropriate sake. Xie xie. She was very nice and put up with my newbie questions. I should have taken pictures of the shop (facepalm), my bad. Next time.

Looking forward to tonight, barring any unforeseen circumstances.

There are a couple of place in town that have similar characters (chefs); Sushi Izakaya Gaku (1329 South King Street, Honolulu, Hawaii) and Ah-Lang Restaurant (725 Kapiolani Boulevard, Honolulu, Hawaii) come to mind. Know of any more?
