Waste not, want not. The leftover pork shank, and meat was used to its ultimate end.

Pork Shank Bowl

Rice, pork shank meat, kabocha. The extra Bulldog tonkatsu sauce kicked it up. The Mouse’s lunch. Mmm!

The Cat’s Bento

Rice, Brussels sprouts, pork shank meat, kabocha, roasted sweet potato. The bento container fully loaded.

Our server packed the bones separate. Good job!

The Mouse simmered for hours with ginger and vinegar to make a broth.

Frozen vegetables and canned bamboo shoot to finish. The Cat was even able to dig out marrow from the bone. 🙂

Main

Snake River Farm guava BBQ Kurobuta pork shank, pan gravy, garlic mashed potato, steamed rice, haricot vert, braised red cabbage. Fall off the bone. Mmm! Both The Cat and The Mouse ordered. Leftovers! 🙂

Strawberry parfait, Italian ladyfingers, fresh macerated strawberries, mascarpone cheese, chantilly cream.

Too much dairy for The Mouse.

The Cat ordered pork shank for brunch yesterday.

Pork Shank, Guava Glaze

The shank was well-cooked, just a little too salty for The Cat’s taste. She took most of the shank home.

The Mouse took the bones and the connective tendons, simmered for an hour or so, added carrot and leftover rice. No added salt.

Pork Shank and Rice Soup

The salty taste was absorbed by the rice, diluting the flavor (a good thing). The Cat liked. 

The Mouse will be applying for soupmaker position at Campbell Soup. Hee hee.

Test Test

The warehouse doesn’t have a test kitchen, officially, but … impromptu.

One of the purchasing staff dabbles. Boned pork shank, kalbi sauce (both out of the warehouse), pressure cooker. The Mouse thought the texture was good but the sauce overpowered everything, too salty. Dilute with water or beer next time. Good try though. 🙂
