The upper portion of the pork hock (the lower portion was cooked last week).

This time, after the hock was cooked, added about a third of a can of mushroom gravy.

Gravy

Pork hock, tree ear fungus, ginger, apple cider vinegar, gravy, no peanuts this time.

Pork Hock Soup/Stew

More soup than stew, The Mouse didn’t want to put in so much gravy to make the pot so thick but maybe not enough. That’s okay, with gravy, less is better. At least according to The Cat.

Also, to those that made the ultimate sacrifice … a heartfelt thank you.

The Mouse inspired by last week’s oxtail soup. Bought a nice pork hock.

Pork Hock

No recipe, after the usual par boil and wash, added wood ear fungus, ginger, vinegar, and peanuts.

For The Cat’s noodles, The Mouse added whit stemmed cabbage and some leftover dan dan noodle soup (for flavor).

“Spicy” Pork Hock Noodle Soup

The Cat slurped.

A chef told us once, get to know the chef, maitre d, server, butcher.

The Mouse getting to know the warehouse in-house butcher. He cut pork hock for The Mouse on Friday (employee discount price).

Fresh

Local pork, not frozen, fresh. Enough for two batches of soup.

Ready for Simmer

Parboiled, washed, wood ear fungus, goji berries, ginger, water, vinegar, vodka, pinch of sea salt.

Seven Hour Simmer

Almost, but not quite, fall apart. Perfect.

The Cat’s Bowl

Pork hock soup, with hock, mustard green, bamboo shoot, soba noodles. Slurp.

Enjoy. Eat well.

Between Holidays

Not too much happening.

Pork Hock

Broth and meat for The Cat’s lunches and dinners. Nothing fancy, pork, water, vinegar. Broth jelled solidly. The Mouse could’ve made an aspic. Hee hee.
