The restaurant makes a coffee gelatin, one of The Mouse’s favorites. And it is non-dairy, whoo! Whipped cream can be added on request.

Good that the restaurant packed the curry separately, the eggplant didn’t get soggy. Paws up!

Restaurant extending their 20th anniversary special from last year, eggplant tempura at 99 cents and shrimp tempura for $1.99. Yes please.

Original plan was the extra was for The Cat’s dinner, but she got home way late and the container ended up in the refridge. The Mouse will probably eat it later.

Is Plan A today? Dunno yet.

The Mouse didn’t have a plan for the eggplant, just started cooking and hoped for the best. Hee hee.

Sliced Eggplant

Peeled, sliced, drenched in oil and drizzled with apple cider vinegar. Roasted for about 50 minutes.

Roasted

Slightly crispy in places, soft and squishy in others. The Mouse tossed and added salt and pepper.

Ugly but Tasty

If The Mouse planned better, he would have made the eggplant more like baba ghanoush. Still it was good. A little too much vinegar for The Mouse’s taste, but The Cat liked it.

Cold Cut Sandwich

The Mouse’s dinner. The vinegar acted to balance the saltiness of the cold cuts, so it all worked out. 🙂
