Whew! Re-hydrating this batch of dried bamboo took a bit of time.
Bamboo Shoot
Three days of room temperature water, two nights of low and slow simmering, and countless washing. The Mouse almost thought he had to run wires through the water and hope for lighting strikes. Hee hee.
Kinda on the same theme, the shiso are sprouting again.

The main ingredient:
Pork Hock
Par-boiled, washed. Water, sake, sea salt, apple cider vinegar, loads of ginger, simmered for hours.
Done
Finished with Napa cabbage and rehydrated bamboo shoots (yesterday sneak peek).
