Tuesday, work, first day of new semester, “no one leaves the office”, even for lunch.

Breakfast.

Mmm!

Instant oatmeal, raisins and cinnamon. Added a spoon of chia seeds, I want green hair! Hee hee.

Lunch.

Includes garnishes, local staple. The Mouse didn’t use the included soup packet, too salty, enough flavor without.

The Cat brought home this turnip the other day.

Or is it udderly weird? Hee hee.

Went into a turnip stew with quinoa, chia seeds, toasted sesame seeds, shoyu, and ground pork.

Which in itself I thought was kind of weird, but the Cat liked it (tail up). A very strong turnip taste (obviously).

Must be getting my creative mojo back in the kitchen. Did two weird dishes today that turned out pretty good. Brunch was pasta with faux “pesto”.

The “pesto” was spirulina, olive oil, Vegemite, and chia seeds. Didn’t have any cheese, didn’t really need any. Maybe try the “fake” soy cheese next time (get it? fake cheese for faux pesto). Hee hee.

For dinner, planned to make an eggplant stir-fry with bacon.

Can’t tell by the picture but these eggplant are really skinny (and kind of short), four to five inches. Couldn’t peel them, nothing would be left. Did a thin slice and added them to bacon lardon and the redered fat. After a few minutes, the skin was still tough (The Cat would chew and spitting all night). A change on the fly. Added Shao Xing wine, water, quinoa, and chia seeds and simmered for about fifteen minutes.

The Cat it  was iron chef worthy. I just thought it was a good improv when what I had in mind did not come out quite as expected. 🙂

Super Foods

The Cat thinks I’ve been eating too many SPAM sandwiches during this holiday season (easy to make, pack, and very portable, good when eating on the run).

Okay, so for lunch the other day (one of the few days I was not at Willies) made a bowl of super food.

Quinoa, chia seeds (yes, those chia seeds), tuna, tomatoes, turnip greens, and capers for taste (okay, capers are not a super food, but I like them with tuna).

On another long night shift, bought an açaí bowl from next door.

Have to stay healthy (relatively anyway), after Christmas come returns and sales. So looking forward to that. 🙂
