Thick cut pork belly.

Pork Belly

Cut into lardon pieces, browned, braised in water, apple cider vinegar, liquid smoke, added white stem cabbage stems, another braise, and finally the cabbage tops, quick braise. Salt, pepper, monk fruit sugar, dash of shoyu, and a drop of orange extract.

Not the normal quick stir-fry The Mouse usually does with vegetables, a softer, deeper flavor. The Cat liked. 馃檪

The oxtail. Part II.

After the parboil (about 30 minutes), drained, cooled, and refrigerated.

Trimmed the outside fat (think fat cap).

Into the pot. Oxtail, tree ear fungus, heavy soy sauce, salt, pepper, sugar, vodka, orange extract, ginger. Slow simmer for about an hour, add peanuts, more slow simmer for another 90 minutes, add turnip and bamboo shoot, more simmer for another hour or so.

Right now, the stew is resting in the refridge for at least overnight to let the flavors and liquid soak and distribute.

First, there were the fava beans.

You know what’s coming, right?

Liver

In this case, chicken. not the Dr. Lechter kind. Hee hee.

Parboiled, drained and washed.

Wood Ear Fungus, Ginger

Simmered the wood ear fungus, drained and washed.

A quick braise with whiskey, black pepper. Salt to finish/taste.

Not very photogenic, but nom. Something different for The Cat’s bento.

The Cat came home with a package of fresh okra. The Cat is not so fond of okra, but The Mouse is. Although, The Mouse is more used to working with the frozen variety.

Decided to combine the okra with a week end semi clean out of the refridge.

In the Sink

Okra, celery, tomato.

Sliced all somewhat thin (the okra seeds kept falling out). Into a pan with a bit of smoked pork (also thinly sliced), and water (the okra started to stick to the pot).

And, following Aunty Marialani’s instructions, I did taste first, just to see if “just right”.
