Dressed up the ground pork stew from earlier this week.

The original can had okra, so, the more the merrier.

The hoppin’ john can added a bit of spice to the mix, in a good way. Only wish could’ve added a package of natto, but that’s gotta wait ’till The Cat is away. Hee hee.

Got to the bakery a little late. Only a few packages left. The Mouse only needs one. 🙂

Leftovers?

A small portion of spicy eggplant leftover. What to do?

Whole Wheat Toast -Margarine (with Flax Seed)

Then

Pan Roast Grape Tomatoes

After the tomatoes “toasted”, added the leftover eggplant and simmered. Served over the toast.

The Mouse’s “Mess”

Inspired by a little bit of ratatouille, a little bit of bruschetta, or just call it “cleaning out the refridge”. Hee hee.

Should’ve thought of it at the time and added a fried egg on top. Brain too small. 🙂
