The Mouse still trying to cook zucchini in the toaster oven.

Raw Zucchini

Thin sliced, grapeseed oil, apple cider vinegar, salt, pepper. Roasted at 300 degrees for fifteen minutes then cranked up the heat to 450 degrees and turned on the convection option.

Roasted Zucchini

The Mouse was satisfied with the result. Not roasted to crispy but enough browning to make the zucchini photogenic. Hee hee.
