The Mouse, running errand near the Taiwan boba tea shop, picked up lunch.

Taiwan Omelet

Turned out to be more like a sandwich. A crepe-like thingy stuffed with a fried egg, shredded/dried pork, and cucumber. Not bad, just not what The Mouse was expecting. Maybe the next time The Mouse is in the mood for a sandwich. 

Also picked up a bento for The Cat.

The Mouse thought of something he can make to use the tuna packed in water. Started with a can of mixed vegetables (carrot, lima bean, potato, corn, peas).

Mixed Vegetables

Normally, The Mouse not a fan of canned vegetables, texture feels overcooked, except for spinach (watched Popeye cartoons small-kid time), but an impulse try.

Cooked a handful of elbow macaroni, added the mixed vegetables, drained tuna, mayonnaise, olive oil (to reduce the portion of mayo), dried parsley, turmeric, salt and pepper to taste.

Turned out pretty good. No recipe, throw everything in and pray, hee hee. The canned vegetables were a surprise, might buy again.

Culling the pantry (just keeping it under control).

Salad?

Maybe from the 1950’s? Canned spinach, canned tuna, fresh tomato. Problem with buying in bulk? Buying in bulk. The tuna is packed in water. Not the end of the world … 😉

The Mouse prefers oil. Have a few more cans in the pantry to finish. Sigh.

The Mouse’s bowl. Mmm.

Fish and Rice

Canned tuna (mixed with the rice), smoked salmon, anchovies, and pickled pepper (for contrast). Nom.

The tuna was packed without oil, oil would’ve tasted better. Hee hee.

The Mouse bought a package of high fiber tortilla wrap, each wrap has close to 50% of daily recommended fiber, TMI? High-fiber, low-carb, gluten-free. All the hyphenated buzz words. Hee hee.

Pre-Wrap

Grilled chicken, roasted sweet potato, smoked salmon. Threw it in the toaster oven.

The Mouse’s Dinner

The hodgepodge of ingredients mixed surprisingly well. Honestly, The Mouse thought the sweet potato wouldn’t play well, but it did, kinda like avocado in texture. Although an avocado would be appreciated too, along with maybe a nice and light miso sauce. 😉

Well, The Mouse has a whole package to experiment with. May or may not (probably not, TMI) write about the high-fiber results. Hee hee.
