Awhile back, The Mouse bought three packages of Japanese pickles packed in miso. The first package was total failure. Too salty, too hard (eggplant pickles). The other two packages sat in the refridge awaiting their fate.

Last night, The Mouse made luncheon meat (not SPAM, sigh) sliders, ran out of his favorite wine and herb pickles, give a package of the Japanese pickles another try.

This package contained eggplant (again), turnip, and cucumber.

First rinsed the vegetables thoroughly of all the miso marinade. Boiled the eggplant twice, soaked the turnip and cucumber in plain water for about 20 minutes.

1000 percent better. The eggplant was softer, chewable, and everything was less intensely salty. The eggplant went into The Cat’s pork belly and vegetable soup instead of salt. The eggplant provided a nice flavor to the soup and pork.

The turnip and cucumber went well with the sliders.
