First time trying this method for The Mouse.

The Cornish Hen

Kitchen shears, cut out spine (reminded me of one of the Underworld movies), flattened, Hanapepe salt, pepper, olive oil. Roasted in toaster oven for 45 minutes.

The Cat said cooked perfectly. 🙂

Chef H gave us some preserved Meyer lemon in Hanapepe salt.
