Mixed Rice and Roasted Sweet Potato

The Mouse’s Lunch

Rice, SPAM (lite), spinach. Sesame seeds from the warehouse kitchen. Simple, comfort food. Nom.

The Mouse prefers the lite SPAM, there is a window to add additional flavor without worrying too much about over seasoning. Also, if The Mouse adds a little sesame oil to the dish, there’s a space for that too. 🙂

Roasted Sweet Potato

The warehouse kitchen has a very good toaster oven, The Mouse can throw the sweet potatoes in there, crank it up, and basically forget them for 45 minutes or so. No one bothers after the morning rush and before lunch. Let them cool, pack them up, re-warm in the toaster oven at home, ready for The Cat to eat. Easy peasy. 🙂
