Oxtail!

And so it begins.

Rinse the blood off, parboil to “clean” and to render some of the fat off.

Also rinsed and parboiling. Not in the same pot.

It’s going to be a process.

The Mouse decided Asian style, the carrot and celery for Western style were too expensive.

Also planning to add bamboo shoot (canned), and maybe black-eyed beans.

Enjoy. Eat well.
