Lamb Rib Drama (or is it Trauma?)

Couple of months ago, Chef H, cleaned out the restaurant freezer, kitchen was being renovated. He “gifted” The Mouse and The Cat with a package of lamb ribs. Package sat in our freezer until now.

The Mouse is not familiar with lamb meat so was a little nervous.

Lamb Ribs

Ribs too small to fire up the oven, Ribs too big to fit into the toaster oven.

The Mouse broke the ribs down to three easier to handle sections.

Toaster Ovened

With Kaua‘i sea salt and Togarashi pepper blend.

Poached four ribs for broth and meat for The Cat’s noodle soup.

Lamb Rib Noodle Soup

With cream style corn, chopped spinach, mushrooms (all either canned or frozen), and soba noodles. Slurp.

Finally, pan-fried the odd end tip.

Pan-Fried Lamb Meat

Again, seasoned with Kaua‘i sea salt and Togarashi pepper blend.

Whew!

Not quite enough Cajun seasoning, slightly overcooked fish. Still, not too bad.

The Cat’s Fresh Fruit Crisp Ala Mode

Yesterday’s selection was apple and mango.

The Mouse’s BBQ Kalua Pulled Pork Sandwich with Salad

Celery seed coleslaw and fresh cilantro on house-baked bun.

If there is Kalua pork on the menu, The Mouse is there. Didn’t need the BBQ sauce tho’. Asked for sauce on the side. Prep is already mixed in. Minor.

The Mouse’s Blueberry Bread Pudding with Bananas and Caramel Sauce

Apologies for yesterday. Transitions jobs, got slammed by both. New employer’s records are … a challenge. Gonna take some time putting things in order. Old employer has major communication issues (one of the reasons The Mouse is leaving).

Braised Pork Belly Sandwich

Soy-braised pork belly, french roll, pickled vegetables, cilantro, pickled ginger aïoli, maui onion-tonkotsu broth,
hurricane fries.

The Close-Up

The Cat’s brought home a mousie bag to sample. Very good sandwich and dipping sauce. Although a little pricey. But The Mouse guesses if you are eating at Mariposa, price is relative. Hee  hee.

So, yesterday was pig in a blanket day. The Mouse couldn’t pass that up. Hee hee.

KC Waffle Dog

From the Rainbow Drive-In offshoot, Hawaii’s Favorite Kitchens.

And since the Mouse was there … Hee hee.

Chili Dog Bowl

A few concessions, bowl instead of plate (smaller portion), there was the waffle dog after all, steamed vegetables instead of mac salad, the illusion of a eating healthier. Hee hee.

For The Cat, The Mouse got …

With watercress greens. The Cat crunched.
