Week’s end. Cleaning out the food. Came across a can of chicken “spread”, thought about making chicken salad, the “spread” part didn’t register in my brain until I opened the tin.
Texture like butter (but softer), lard maybe, general eww. No other alternative (didn’t want to just chuck it), being pake and all.
Mixed the spread with chopped celery and Napa cabbage. Had an artificial, weird taste and aftertaste. Added black pepper, rice vinegar and apple cider vinegar. Figured the vinegar could at least mask any weirdness.
While not pretty, and certainly not desirable, it was at least palatable (think weird local style macaroni salad gone awry). Not doing this again. Eww eww. 🙂

Not all canned meat is SPAM. Lesson learned.
Luckily The Cat brought home her leftover salad from CPK.
Super-grain salad with asparagus, sun-dried tomatoes, red onions, toasted pine nuts and Feta tossed in our housemade Champagne vinaigrette.
Could’ve used a bit more vinaigrette, but I’m not complaining.
