Since it was a “spur of the moment” kinda cook, used whatever was in the pantry.
First, I think I overcooked the eggplant, kinda fell apart. Added coconut oil, peanut butter, apple cider vinegar, salt and pepper. The Cat said too sour (I guess too much vinegar, oops).
Oh well, next time.
