One of my father’s favorite foods.
Straight outta can. Never understood why they would call it “pork” and beans when there was very very very little pork in the can (if at all).
Whenever he ate a can he would always tell this joke: Butcher drives up to a huge pork and bean factory. Factory owner comes out and greets the butcher. Butcher asks the owner “how much pork fat you need this week”? Owner responds one pound. Butcher respond, “wow! must be working overtime this week”. Hee hee.
The Mouse’s version (the dish, not the joke, maybe a little of both).
Pork belly, marinated with ginger and gin. Pre-cooked (in-house, not canned) Azuki beans. Sugar, salt, black pepper, and a drop of apple cider vinegar. Steam for 30 to 45 minutes.
This time, did not render the oil from the pork, let the beans absorb the porkiness. The Cat almost ate the whole bowl herself. 🙂
