In the Kitchen

Yesterday, there was talk of us staying in the neighborhood for either breakfast, brunch, or dinner. Didn’t happen. After looking through the refrig, decided to just stay in (plus the weather wasn’t cooperating).

Turns out, you can cook the winter melon with the skin on, for the nutrition, just don’t eat the skin, kinda hard, just scrape the flesh off and toss the skin.

Took the pork skin (and attached “fat”) and stir-fried it with eggplant.

Trust me, this one is a winner. The collagen from the skin thickened the sauce (gave it that “lip glue” texture, a good thing).

Used every bit of that smoked pork hock segment, made broth/soup and a stir-fry, thank you piggie.
