Kind of cooking on the fly again. Would’ve taken too long for traditional Chinese winter melon soup (chicken stock, diced ham, water chestnuts, etc.) all that dicing.
Used whatever we had on hand.
Dried shrimp, dried mushroom, dried seaweed, goji berries, diced winter melon. Simmer for 20 to 30 minutes. Salt to taste.
The Cat yummed.
