Overnight in the slow cooker, no wonder I dreamt about pork. 🙂

So soft and tender, fork shredded.

I could’ve used a tiny bit more salt before cooking but especially for this, better underseasoned than over.

The pork is now versatile. Served with rice, or poi (my preference), in sliders, or even doused with BBQ sauce (don’t worry, I won’t hold that against you). I reserved a couple of servings for The Cat and The Mouse (sautéed with Napa cabbage, tomorrow). The rest, pot-luck at the relatives tonight.

Sooooooooo simple and yet, soooooooooo comforting. Only thing missing is crispy skin. 🙂
