Vegetable Curry

Vegetable Curry

Peanuts, carrots, potato, curry powder, coconut milk, dried figs, dried plums, salt to taste, peanut butter to thicken. First time trying powdered coconut milk.

Not bad actually. Have to reconstitute with warm water. Will definitely use again. Easier to store and cost less. Not sure how it would work with haupia, but for curry, perfectly acceptable.


Pineapple Wedges

BTW, how to breakdown a pineapple. First get a pineapple.



Cut off top and bottom. Stand pineapple up, slice off skin/husk/the outside stuff. Cut out “eyes” in a spiral pattern. I’ve seen chefs just slice off a thicker portion of the skin that doesn’t require a separate process but I know the “old school” way.

Quarter the pineapple, cut out core, sliceĀ into wedges (see above).

Forgot to take pictures of the other potluck dishes. šŸ˜¦
