Beef cuts must have been “scraps”, full of connective tissue and a little bit of tendon. Not the cut of meat that was important, but braised for a loooong time until the connective tissue was “like buttah”. Serving was substantial. Enough volume in the tummy to carry over to dinner. Cheap eats indeed.
