Slow Food

Rainy day today. Good time to prepare “slow food”.

No gourmet preparation, water, salt, pepper. Simmer for three to four hours (until soft).

Bacon “jam”, one of my work in progress. This time, more like a ragout.

Bacon (naturally), diced onion, raisins, capers (with a little of the brine), Shao Xing wine, apple cider vinegar, turbinado sugar, and peanut butter. Kind of different than some of the recipes on the internet. No food processing or hand blending, all chunky baby! 🙂

Turned out pretty good. Toasted sour dough bread, the bacon thingy, tomato jam, and shiso leaves.

Probably will work on freshly cooked pasta too. Or with hot rice with an easy over egg. 🙂
