Today’s “snack”

Mango-Cornbread Stuffed Pork Filet

From the “clearance” section at Diamond Head Grill. Four paws good. The mango made its presence known but did not overpower. My only “complaints”/suggestions is the stuffing was not “cornbready” enough and the pork was a little too lean. Imagine a stuffed pork belly, porchetta style. Mmmmm. One day, I may tackle a  stuffed pork dish. One day. 🙂
