Must be getting my creative mojo back in the kitchen. Did two weird dishes today that turned out pretty good. Brunch was pasta with faux “pesto”.
The “pesto” was spirulina, olive oil, Vegemite, and chia seeds. Didn’t have any cheese, didn’t really need any. Maybe try the “fake” soy cheese next time (get it? fake cheese for faux pesto). Hee hee.
For dinner, planned to make an eggplant stir-fry with bacon.
Can’t tell by the picture but these eggplant are really skinny (and kind of short), four to five inches. Couldn’t peel them, nothing would be left. Did a thin slice and added them to bacon lardon and the redered fat. After a few minutes, the skin was still tough (The Cat would chew and spitting all night). A change on the fly. Added Shao Xing wine, water, quinoa, and chia seeds and simmered for about fifteen minutes.
The Cat it was iron chef worthy. I just thought it was a good improv when what I had in mind did not come out quite as expected. 🙂
