I chose to layer the ingredients instead of mixing them all together.

From bottom up, braised onions, crispy bacon bits, smoked oysters, a baked egg, and green shiso (beefsteak?) leaves.

Excellent. The bacon and the oysters complimented each other, the onions provided the right amount of vegetable matter (otherwise the dish would be too heavy), the egg was cooked but still runny (to provide the perfect “sauce”), and the shiso leaves gave the dish a freshness (not to mention a bit of color). Definitely would do this again. In my opinion, it’s a party worthy dish. It has a rustic feel yet there is an ohh! factor.

Since The Cat can’t eat onions, I made an egg fu yung style omelet for her with celery and bacon.
