As promised, my take on kale, inspired by the kalua pork and kale plate the other day (see previous post). Picked up a bunch of kale and an eighth of a pound of pancettafrom Whole Foods.


The clerk said this variety of pancettawas slightly “fermented” (his word not mine). I think he meant to say it was “aged”. It did have that “aged” aroma to it.


I guess I could have used bacon, but since I was in the store, what the heck. Not sure you can see it in the picture, but the pancetta has a slight greenish tinge to it.

I cleaned the kale, chopped the pancetta, and fried it crispy.

Did a sauté/braise treatment with the kale and added the pancettaat the end.

Turned out pretty descent. Kale is supposed to be a “super food”, hope the pancetta didn’t throw the benefits out of whack. 🙂
