Stay Tuned

I was near Chinatown today, stopped in and picked up a package of “Chinese bacon”.

The “cinnamon flavored” is intriguing. I’m hoping something got lost in translation and it’s more five spice. Anyway, the last time I used “Chinese bacon” , it was a fail. The meat was too hard.

After some research on the internet, the bacon either has to be steamed or soaked before use. I have some ideas. Have to find some time to get back into my own kitchen to experiment. Stay tuned.
