Yesterday at the farmers market, I picked up a bag of mixed vegetables from one of the Filipino vendors.
I know it’s supposed to go into one of their dishes but the name escapes me at the moment.
I did a quick rinse. Kabocha squash, Japanese eggplant, okra, tomatoes, and long beans. Just add pork, chicken, beef, or tofu. I cooked it plain with vegetable stock.
A quick stir-fry then simmered in the vegetable stock for ten to fifteen minutes. Easy peasy, and healthy. The Cat said yum.
