Tonight, Chef brought out a chunk of Italian Speck. Chef usually adds it to his daily pasta or risotto dishes. Here’s the Wikipedia link: http://en.wikipedia.org/wiki/Speck

He must’ve been hungry because started shaving pieces off and munching on it. He also shaved samples for the staff (me included). First time for me to try Speck. Had it on some of the house bread. Pretty tasty. Tasted like a cross between salami and ham or bacon to me.
