It’s been a little chilly the last couple of days, not near the extreme and devastating weather conditions of the mainland, but cold for me nonetheless. A good time for a hearty soup and sandwich. I was going to make chicken feet soup but with The Cat’s schedule being so unpredictable (it is tax season after all), dealing with a large pot of soup in the refrig was out of the question.
Picked-up a container from the nearest Safeway.

Coconut and Red Curry Chicken Bisque
I was thinking of a banh mi to go with the soup, but the sources nearby are not that exciting. And I don’t think curry and grilled cheese goes together well (my opinion). Went with a SPAM and egg sandwich from L & R Drive Inn (45-582 Kamehameha Highway Kaneohe, Hawaii). Not the junk spam, the good SPAM (with a capital letters). 🙂
SPAM and Egg Sandwich
I know, I know, I was supposed to get back to whole grains, but SPAM and egg on white bread just feels right. 😉
Everything turned out pretty well. Should have read the soup label closer (there was rice in it), The Cat ended up with rice in her jook and her soup (she wasn’t complaining though). The soup had a bit too much lemongrass for me (a little tart), but still good.
