Someone recently asked me what my favorite lunch is. Something I could eat everyday. I have two. If it’s a cold lunch, a peanut butter sandwich. No jam, no jelly. Just peanut butter between two slices of bread. Nowadays, it’s whole grain, high-fiber, good for you bread. Small-kid time it was Wonder bread. Sorry, no picture (but I’m sure you get the idea).
If it’s a hot lunch, a bowl of steamed rice (white, brown, or mixed grain, it doesn’t matter), and a can of sardines.
My father used to mix the sardines with thinly sliced onions (raw or sautéed). Me? Plain and simple (has to be packed in oil though). Warm the opened can on the stove burner for just a minute, lift the sardines out of the oil, plop on hot steamed rice. For the moment, everything is right with the world. 🙂
