Ma Po Tongue-Fu!

Just me. Dr. Frankensteining again. The last of the tongue.

The Tip of the …

The tip and the back of the tongue have slightly different textures. I prefer the back portion for sandwiches (larger pieces, less fallout). To me, the front is more for braising, steaming, and stir-frys, but that’s just me.

Diced the tongue,

Sliced white mushrooms,

Lightly stir-fried the mushrooms,

Added diced tongue and diced soft tofu,

Added packaged Ma Po Tofu sauce, mix,

Pour over cooked noodles,

Add fried egg,

Garnish with boiled turnips,

Mix to combine and slurp.

I had just enough tongue to make myself a grilled cheese and tongue sandwich.

Taster or …

Tastee. That is a question. Hee hee.

From the previous post, many of you guessed correctly. Beef tongue.

Given my limited exposure to all of the parts of a cow (I have yet to try beef cheeks, brain, eyes, and many cuts of steak), so far, the tongue is my favorite part of a cow (probably inherited the taste from my father). The texture is meaty but tender, fatty and full of connective tissue. Big yum.

Beef tongue is right up there with pork belly. :)

This past weekend, we acquired a beef tongue (see picture in previous post). I find it best to keep it very simple, slowly simmered (a long time) with a little carrot, celery, and onion. I added to the “holy trinity” some peppercorns and a bay leaf.

After a couple of hours the tongue came out of its “bath”.

With beef tongue, there is a “skin” over the tongue that to me is quite unpleasant if left on. The base of the tongue already has part of the skin peeled.

I cut the  back half of the tongue into slices for sandwiches.

A little whole grain mustard, fig jam, shiso leaves, and tongue, on lightly toasted squaw bread, salt and togarashi pepper to taste. Socks off, of course.

A little European flavor (whole grain mustard and fig jam), and a little Japanese flavor (shiso leaves and togarashi pepper). Yum.

The front half, including the tip got frozen for the future, probably a quick braise or steamed, Chinese-style, soy sauce, sugar, ginger. Drool. Stay tuned.

So the question is when I eat beef tongue, am I the taster or the tastee? Hee hee!

So, I finally decided what to do with our little tomato.

Pretty awesome (if I do say so myself). Hee hee!

There are a few more immature tomatoes I saw on the vine. Can’t wait for them to get a little bigger. :)

Business meeting with a former coach for the Australian National Team and his wife. They picked Italian food, one of the restaurants in the mall. I went with a simple soup and sandwich selection (ordered separately).

From  the description, I thought it would be more like Portuguese Bean Soup. In my opinion, not enough pasta or beans in this version.

I’m not familiar with eggplant parmigiana (The Cat is better acquainted with it), Not much eggplant taste, more like a grilled cheese sandwich. My opinion, I prefer spicy eggplant, Chinese-style.

The accompanying marinara sauce was pretty good though.

The Cat ordered a crusted monchong salad.

It was just ok. I ended up eating the cubes of cheese on the bottom right of the picture. Even with lactose pills, I was a little (okay, more than a little) gassy. At least it was only gas. Sorry way too much info.

The high point was meeting the coach and his wife. Very inspirational. Kind of like meeting Yoda, very wise but talks funny. :)

I think next time we meet I’m going to suggest Chinese food. Dim sum in particular. With spicy eggplant. Hee hee.

Coincidence?

I think not. Found/bought this at the gas station convenience store today.

Your typical convenience store sandwich, except that the mayonnaise included chopped bacon (can you imagine?). If you recall here, I added chopped bacon to my hamburger patty. Adding chopped bacon (as compared to bacon strips) to sandwich ingredients, I must be on to something here (almost a no brainer). :)

So the big question is how was the “club” sandwich? Considering it was from a convenience store shelf, not bad at all (that’s the bacon talking). Not gourmet, but a nice surprise. Socks didn’t come off, but close. Never know what you’ll find and where. Part of the fun.
