Vendor had this for sale at the farmers market last week.
Never heard of a cooking banana before. Asked the vendor if this was plantain, she said no, it was a cooking banana, had to be cooked. Vendor sold me one to try.
Couldn’t find info on the internet about “cooking banana”.
Vendor said to boil it in its skin for fifteen minutes or so then peel it. So that’s what I did.
Texture and taste reminded me of steamed or roasted breadfruit. Taste like a starchy banana with a slight tartness thrown in. The Cat likes. I have permission to buy if available at the farmers market. I wonder if I can “roast” these?
