I’ve posted about Kin Wah Chop Suey before. It’s one of our go to places. I wasn’t going to bore with another post but The Cat requested this one.
This is one of The Cat’s favorite noodle dishes ever (not only from Kin Wah, but ever!).
Oftentimes, when pot roast duck with noodles in soup in on the menu, and we’re not eating family style, The Cat will order it (with a substitute of look fun noodles if possible). The Cat prefers pot roast duck in noodles instead of roast duck (seems to be softer with more meat). The above soup has mustard cabbage but any greens will do.
Usually, especially at Kin Wah, there is too much duck for The Cat to finish in one sitting; she takes home about half of the duck and some of the broth.
The next day, I made a shiitake dashi with dried mushrooms, added the leftover duck and broth, turnip greens, and frozen look fun noodles (The Cat’s favorite soup noodle) to make The Cat’s dinner.
We tend to use a lot of dried mushrooms.
The Cat said it was just as good as the restaurant.
